History

Founded in 2014 by Dan Szor, a native New Yorker with a passion for whisky, Cotswolds Distillery was born out of a desire to create world-class spirits rooted in the beauty of the Cotswolds. Szor’s inspiration struck while gazing out at a field of spring barley from his farmhouse, leading him to envision a distillery that would not just produce spirits but also celebrate the local agricultural landscape. The distillery commenced production on September 5, 2014, with its first cask of single malt whisky being filled just a few weeks later on September 22, 2014. Assisted in its early development by renowned whisky consultant Dr. Jim Swan and seasoned industry experts like Harry Cockburn, Cotswolds Distillery quickly established itself within the craft distilling community. As the distillery evolved, it introduced a range of innovative products and collaborations, including limited-edition releases such as the Traitors Ford rye whisky created in partnership with Hook Norton Brewery and the Royal Gardens whisky made with barley from the Highgrove Estate. Notably, the distillery has made strides in sustainability by implementing an ecological wetland treatment system for wastewater, cementing both its quality and environmental commitment as it continues to grow in capacity and reputation.
