Fabrication Process

The process begins with the careful selection of the rare Hunter barley, a critical ingredient that is malting under strict environmental conditions to preserve its character. Once malted, the barley is milled and mixed with hot water to create a mash, facilitating the conversion of starches into fermentable sugars. Following mashing, the liquid is transferred to fermentation vessels where yeast is introduced, initiating fermentation. This process typically lasts about 72 hours, resulting in a wash with an alcohol content of approximately 8-10%. The wash is then distilled twice in copper pot stills, a traditional method common in Irish whiskey production, during which the spirit’s character is refined. In the first distillation, the alcohol evaporates and condenses, resulting in a low wines distillate. The second distillation focuses on selecting the heart of the run, where the most desirable flavors and aromas are concentrated. The spirit is then transferred into a combination of casks for maturation—45% first-fill US oak, 19% virgin US oak, and 36% French oak.
