The 17-Year-Old was introduced as part of an expansion of their Principal Collection to celebrate the distillery's dedication to sherry cask maturation. Fabrication Process

The production of The Dalmore 17-Year-Old begins with the meticulous selection of the finest barley, which is malted to ensure maximum flavor extraction. The distillation process takes place in traditional pot stills, allowing for a careful balance of spirit to be achieved. After distillation, the spirit is initially matured in American white oak bourbon barrels, which imbue the whisky with a foundation of vanilla sweetness and soft, rounded honeyed notes. Following this initial maturation, the whisky is transferred to a trilogy of rare sherry casks—Amoroso, Apostoles, and Matusalem—sourced from González Byass. This second maturation phase is essential, as it enriches the whisky with deeper flavors, imparting the sherry cask characteristics of dried fruits, spice, and complex sweetness. After 17 years of careful aging, the whisky is brought to bottling strength, ensuring that the careful craftsmanship is preserved in every bottle.
