The production of Tequila 30-30 Añejo is a meticulous process that begins with the careful selection of high-quality blue agave plants, harvested when they reach the peak of sweetness, between seven to nine years of age. The core of the agave, known as the piña, is extracted and then steamed, allowing the natural sugars to caramelize, which enhances the flavor profile. Following steaming, the agave is crushed using a traditional tahona or a modern mill to extract the agave juice. The juice is then placed in stainless-steel fermentation tanks, where natural yeast begins the fermentation process without the presence of fibers, creating a clean and pure base. The resultant liquid undergoes a double distillation in stainless-steel pot stills, ensuring a smooth and refined spirit.
