The production of Yamazaki 12 Year Old begins with the careful selection of ingredients, primarily malted barley, and unique yeast strains specific to the distillery. The process begins with mashing, where crushed malted barley is mixed with heated water to extract fermentable sugars. This mixture is then cooled and transferred to fermentation tanks, where the yeast is added, resulting in the creation of a low-proof wash. After fermentation, the wash is distilled twice; initially in copper pot stills for the first distillation, followed by a second distillation to produce a higher alcohol content spirit. This dual distillation process is essential for developing the complex flavors characteristic of Yamazaki whisky. The resulting spirit is then transferred to a variety of casks for maturation, notably Mizunara oak, which imparts unique flavors exclusive to Japanese whisky, along with American oak and sherry casks. Each type of cask contributes distinctive characteristics to the spirit as it ages over 12 years, allowing it time to develop its depth and complexity.
