The fabrication of Southern Star Standard High Rye Straight Bourbon Whiskey begins with the careful selection of grains, primarily sourced from local North Carolina farms. The mash bill, consisting of 60% corn, 36% rye, and 4% malted barley, is milled before being cooked in large mash tuns. The cooking process allows the starches from the grains to convert into fermentable sugars, which is a crucial step for achieving the desired flavor profile.
Following this, the mash is cooled and transferred to fermentation tanks, where yeast is added, transforming the sugars into alcohol over several days. The resultant beer is then distilled in copper pot stills, allowing for precise control over the distillation process. Distillation is conducted in two stages, with the liquid being separated into heads, hearts, and tails; only the hearts are retained for maturation, ensuring a refined spirit.
After distillation, the high-rye bourbon is placed in new charred American oak casks for aging. The aging process lasts a minimum of four years, allowing the whiskey to develop its characteristic flavors and complexities as it interacts with the wood. The whiskey is then carefully monitored, and once it reaches its peak flavor, it is bottled at 90 proof, maintaining a strong yet balanced expression of this finely crafted bourbon.
