Fabrication Process

The production of Rum 47 begins with the fermentation of organic panela, which is sourced from a dedicated small family farm in Colombia. This panela, rich in nutrients and flavor, is diluted and fermented using a carefully controlled process to cultivate the yeast strains ideal for rum-making. Once fermentation is complete, the mixture is distilled in a traditional Jamaican-style pot still. The single distillation technique is crucial as it allows for the preservation of the intricate flavors derived from the panela. Following distillation, the rum is blended with another cut of Rum 47 before being aged in used barrels. This aging process, spanning a minimum of three years, allows the rum to develop deeper flavors and character while imparting subtle notes from the barrels used.
