Redbreast 15 YO is crafted using traditional single pot still distillation methods. The process begins with a mash bill that typically consists of both malted and unmalted barley, which is crucial in creating the characteristic sherried flavors. The grains are combined with warm water, and after fermentation, the wash is distilled twice in copper pot stills, which helps to develop the spirit’s rich textures and intricate flavors. Following distillation, the newly created spirit is transferred into a combination of Oloroso sherry casks and American bourbon casks for a minimum of 15 years of aging. This dual maturation process imparts a wonderful complexity to the whiskey, allowing it to absorb the distinct characteristics of both wood types before it is bottled at an alcohol content of 46% ABV.
