Fabrication Process

The fabrication of Redbreast 12-Year-Old Irish Whiskey begins with the selection of high-quality ingredients, specifically a generous mix of malted and unmalted barley. The barley undergoes mashing, where it is combined with hot water to extract sugars necessary for fermentation. This is followed by fermentation in traditional wooden washbacks, converting the sugars into alcohol with the help of yeast. After distillation, the spirit is matured for a minimum of 12 years in a combination of ex-bourbon and sherry casks.
