The fabrication of Redbreast 12-Year-Old Irish Whiskey begins with the selection of high-quality ingredients, specifically a generous mix of malted and unmalted barley. The barley undergoes mashing, where it is combined with hot water to extract sugars necessary for fermentation. This is followed by fermentation in traditional wooden washbacks, converting the sugars into alcohol with the help of yeast. This wash is then distilled through pot stills, which is the hallmark of Redbreast's traditional production method. After distillation, the spirit is matured for a minimum of 12 years in a combination of ex-bourbon and sherry casks. This maturation process allows the whiskey to develop its rich flavors and complex nuances before being expertly bottled at 40% ABV.
