The fabrication process for Kilkerran 12 Year Old Single Malt begins with the careful selection of high-quality malted barley, which is milled before undergoing mashing. This process lasts approximately 72 hours, allowing alcohol to develop alongside complex flavors. The resulting wash is then distilled twice in traditional pot stills. Following distillation, the spirit is matured for a minimum of 12 years in a carefully curated combination of ex-bourbon and sherry casks. The bourbon casks provide a foundation of vanilla and light fruitiness, while the sherry casks impart deeper, sweeter notes of dried fruit and nuts.
