This fermentation process typically lasts around 60 hours, allowing for rich and complex flavor development. Following fermentation, the wash is distilled in traditional pot stills, where the spirit is separated from the grains during the double distillation process. Notably, Kavalan employs a unique distilling technique which allows for a higher level of concentration in the resultant spirit. The distillation takes place in copper pot stills, ensuring that the resultant new make spirit retains the character of the barley while also allowing for the development of floral and fruity notes.
