History

The creation of Kavalan whisky kicked off in 2005, a project initiated by the visionary leader of the King Car Group, who sought to put Taiwan on the global whisky map. Named after the indigenous Kavalan tribe, the distillery was named in tribute to the local heritage and culture. The whisky's philosophy centers on embracing the tropical environment and the unique sensory experiences it evokes. The Four Cask Matured expression was developed to highlight the ability of varying cask types to complement and enhance the whisky's natural character, allowing drinkers to explore a wide spectrum of flavors that reflect Taiwan's lush landscape and climate.

Fabrication Process

The production of Kavalan 15 YO Single Malt Whisky is a labor of love that begins with the meticulous selection of high-quality malted barley. After milling, the barley is mashed and combined with pure Taiwanese water to create a fermentation mash. Utilizing unique strains of yeast, the mash undergoes fermentation for several days, developing the foundational flavors of the spirit. The fermentation is followed by distillation in copper pot stills, magnifying the purity of the spirit and concentrating its flavors. One of the hallmarks of Kavalan whisky is the aging process, which employs four different types of casks—Bourbon, Oloroso sherry, Ruby port, and Puncheon. This multi-cask aging is not only innovative but lends an exceptional complexity to the whisky as it receives influences from each cask type throughout its maturation. Finally, after 15 years, the spirit is carefully blended, bottled at 43% ABV, and prepared for connoisseurs to enjoy.
