The fabrication process of Ben Nevis 10 YO Highland Single Malt Scotch Whisky begins with the meticulous selection of high-quality malted barley. This barley undergoes mashing, where it is mixed with hot water to extract fermentable sugars, resulting in a liquid known as wort. The wort is then cooled and transferred to fermentation vessels, where yeast is added to initiate fermentation, typically lasting about 48 hours. The result is a wash with an alcohol content of around 8-10%.
This wash is then distilled twice in traditional copper pot stills, a fundamental element of Scotch whisky production. The first distillation occurs in the wash still, which separates the alcohol from the wash, and the second distillation happens in the spirit still, concentrating the alcohol and refining the flavors. After distillation, the spirit is collected and transferred to oak casks for maturation. Ben Nevis predominantly uses ex-bourbon casks, which impart distinct vanilla and oak notes to the whisky over its 10-year aging process. This maturation allows the whisky to develop its character and complexity, with careful monitoring and sampling throughout the aging process to ensure its quality. Once matured, the whisky is bottled at a strength of 46% ABV, unchill-filtered and without added coloring, preserving the essence of this Highland spirit.
