The production of Auchentoshan 21 Year Old begins with the careful selection of malted barley, which is milled to produce grist. This grist is then mixed with hot water in a mash tun, where sugars are extracted to create a wort. The wort is subsequently transferred to fermentation vessels, where yeast is added, initiating the fermentation process that converts sugars into alcohol. After fermentation, the resultant wash is distilled three times in traditional copper pot stills—a hallmark of Auchentoshan’s production method. The triple distillation results in a lighter spirit that captures the essence of the malt. Upon distillation, the whisky is matured in a selection of ex-bourbon and ex-Spanish sherry casks for 21 years. This dual cask maturation allows the whisky to develop a rich complexity, as the spirit extracts flavors and characteristics from both types of cask. After the aging process, the whisky is carefully vatted and bottled at an alcohol volume of 43%.
