The process starts with traditional malting, where barley grains are soaked in water and allowed to germinate, producing enzymes that convert starches to sugars. Once dried over peat fires, the malted barley is ground into grist and subsequently mixed with hot water during mashing, which helps extract fermentable sugars. The wort produced from this stage is then fermented with yeast in large wooden washbacks, creating a wash of around 8-10% alcohol. This wash is subsequently distilled twice in traditional pot stills, resulting in a high-strength spirit that embodies the robust character of Ardbeg.
Following distillation, the spirit is meticulously matured in a combination of ex-bourbon and ex-Oloroso sherry casks, imparting a diverse flavor profile that balances the intense peatiness.
