The production of Aberfeldy 10 Year Old Equinox & Solstice Whisky begins with the careful selection of high-quality barley, followed by malting, where the barley grains are soaked in water and allowed to germinate before being kiln-dried. This process develops the sugars necessary for fermentation. The dried malt is then milled into a fine flour and mixed with hot water in large vessels known as mash tuns, allowing the enzymes to convert the starches into fermentable sugars. Following this, the wort is extracted and transferred to fermentation vessels, where yeast is introduced, commencing the fermentation process that transforms sugars into alcohol. After fermentation, the resultant wash is captured and distilled in traditional copper pot stills—a process that occurs twice to produce a spirit with the desired purity and character. The spirit is then carefully aged for a minimum of 10 years in a combination of ex-bourbon and sherry casks, leading to a depth of flavor and complexity. The whisky is then filtered and bottled at an optimal strength to highlight its rich characteristics while preserving the integrity of the spirit.
