Introduction
Opened in 2022 in the Haut-Marais district, Déjà Bu is Paris’ first bar entirely dedicated to alcohol-free cocktails. The project was created by Nicolas Goradesky and Jérôme Prouteau, also known for Little Red Door, with the ambition of bringing high-level cocktail culture into a fully no-alcohol environment. Déjà Bu operates like a classic cocktail bar, but without any traditional spirits. Drinks are built using non-alcoholic distillates, house-made infusions, fermentations, fresh juices, and botanical ingredients. Rather than imitating alcohol, the focus is on constructing complex flavor profiles through bitterness, acidity, sweetness, and texture. The menu features only original creations and evolves regularly. Each drink is treated with the same technical rigor as in a traditional cocktail bar, both in balance and presentation. The bar targets not only non-drinkers, but also cocktail enthusiasts interested in exploring alternative forms of mixology. The space is designed as a relaxed neighborhood bar, with a central counter and a warm, informal atmosphere that encourages conversation. Déjà Bu has quickly become a reference point in the international no/low movement, demonstrating that cocktail culture can exist independently from alcohol.
